This loaded baked potato salad is the perfect side dish for potlucks, BBQs, camping trips, and 4th of July celebrations. With the arrival of hot-weather months I look forward to preparing a whole array of delicious cool summer salads that family and friends will rave about. Today I’m preparing this loaded baked potato salad for a little dinner party that our friends are hosting at their beautiful new home.
Ingredients
°4 size potatoes
°1/2 c mayonnaise
°1/2 c sour cream
° 1/2 c shredded sharp cheddar cheese
° 4 tablespoons of crushed stone or yellow mustard (to taste)
° 1/4 c chives
° 8 thick slices of bacon, cooked, crispy and chopped
° Salt and freshly ground black pepper
Directions
In bowl, whisking mayonnaise, sour cream, also mustard to well blended. Adding 3/4 of chop chives with of salt and pepper. whisking to mix. Adding cheese / bacon (reserve some bacon for garnish). Covering mixture and let it cool for 30 minutes.
Peeling potatoes and cut them to halves / half pieces. Cook the potatoes in salted water until the fork softens. Strain and cool slightly. Fold the cooked potatoes into the cooled sauce. Garnish with remaining chives.
