Raspberry Cream Cheese Coffee Cake

 

Ingredients:


+to fill in:
• ¼ cup of sugar
• 8 oz. cream cheese
• 1 egg white
• 1 cup berries - washed and drained well
+For cake:
• 1 and 1/2 c flour
• 1/2 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp salt
• 5. 5 tablespoons unsalted butter - soft
• 1/2 cup sugar
• 1 egg + 1 egg yolk
• 3/4 cup sour cream
• 1 teaspoon vanilla
+To top the streusel:
• 1/3 cup sugar
• 1/2 cup flour
  • 3 tablespoons chilled butter, cubed

Directions:


• Preheat the oven to 350 degrees Fahrenheit. Grease a 9-inch tray and line the bottom of it with parchment paper. Sit aside.
• To prepare the filling: Mix cheese and sugar on medium-low speed until creamy. Adding egg whites also mix over low heat just to blend. Sit apart.
• To prepare the cake batter: In a bowl, mix the flour, baking powder, baking soda and salt, and set aside.
• Using an electric mixer, mix butter and sugar on medium-low speed. Add eggs, egg yolk and vanilla. Slowly mix into the flour mixture, alternating with the sour cream. Transfer the mixture to the prepared pan and smooth it with a spoon. Spreading cream cheese fill on top. Put the berries on the cream cheese filling.
• To prepare the garnish: In a bowl, combine sugar, flour and cooled butter. Stir with a fork or pastry blender until mixture is crumbly (make sure the strudel is into pea-sized crumbs)
• Sprinkling streusel on berries.
• Baking for 40-45 min  Cool on a rack, pass a thin knife around the cake and a ring of the mold.
• Keep in the refrigerator.
