Ingredients:
°2 medium flour tortillas/burrito size
°1/2 pound beef (rib eye or round top), thinly sliced or cubed
°1/2 medium onion, chopped
°1/2 red pepper cut into cubes
°1/2 green pepper, diced
°6 ounces diced mushrooms
°3 slices provolone cheese, (avoid aged cheese), cut in half
°1 tablespoon light olive oil, divided
°1 clove minced garlic
°¼ tsp sea salt
°1/8 tsp black pepper,
°2 teaspoons mayonnaise (optional)
Directions
In skillet, heat 2 teaspoons oil, once hot add ground beef. Seasoning with salt & pepper and cooking to meat is fully cooked. Removing from skillet & covering to keep warm.
Meanwhile, finely chop the onion and chop the mushrooms and peppers into cubes. Saute the vegetables in the same pan until soft, adding another teaspoon of oil if necessary.
Add beef to skillet with minced garlic, stir and cook until meat is heated through.
Spread mayonnaise (if using) over tortillas. Divide the filling among the tortillas and add to one side of the tortilla. Cover the filling with cheese slices and close the tortilla
Heat a frying pan on a medium heat. For a crunchy tortilla, add a little oil to the skillet. Place the tortillas in a hot skillet and fry until the cheese is melted and the outside is golden and crispy, flipping once. Cut it into slices and serve.
