Ingredients to make this easy crock pot:
°Medium package. Of dried northern beans, I used 16 oz sizes.
°3 to 4 pork shank, on occasion, I'd also use a meaty pork bone.
°1 white onion cut into small cubes.
°Enough water to covering beans.
°salt and pepper as needed
°1/3 cup light brown sugar.
Directions :
Step 1:
The first step I started with was sorting the grains for grit, then brushing them under cold water.
Step 2:
In a crock pot, I combined the washed beans with onions, sea salt, and pepper, plus the pork or pork shank, which I had previously cut into large pieces.
Step 3:
Next I added enough water to cover the beans by about two inches. This can result in approximately 6 to 8 cups.
The fourth step:
Once done, cover and cook over high-low heat for about 120 minutes, then reduce to low and continue cooking for an additional 4 to 5 hours, or until beans are tender.
Fifth step:
Next, I removed the pork legs or hoses, and took out all of the beef.
Sixth step:
Next, I returned the meat to the pot and added the brown sugar at this point.
Seventh step:
I found it very helpful to drain about 1 cup of juice before putting in the brown sugar, depending on the thickness or thinness of the grains, and gently mixed everything to incorporate.
Step 8:
And in conclusion, I preferred to pour some into individual bowls for serving!
